Egg Muffins

 8 Eggs
 ¼ cup Heavy Cream
 5 oz Cooked Sausage
 ¾ tsp Salt
 ½ tsp Pepper
 1 cup Shredded Cheese
 ¼ cup Melted Butter

Preheat the oven to 350˚

In a large bowl, mix together the eggs (8), heavy cream (1/4 cup), salt (3/4 tsp), pepper (1/2 tsp), cooked sausage (5 - 6 oz) , and shredded cheese (1 - 1/2 cups). I usually reserve some of the cheese and add to the top of each muffin.

Take the melted butter (1/4 cup) and brush it into 10 sections of a full sized muffin tin. If you don't have a brush, just drizzle it in and swirl it around to try and coat the bottom and sides. Place the buttered muffin tin in the oven for 3 Minutes.

Carefully take the muffin tin out of the oven, spoon the egg mixture into the muffin tin. If you saved some cheese, sprinkle it on the top and put them in the oven. Let them bake for 17 - 20 Minutes until they are cooked through.

Remove muffin tin from oven and let them cool.

Remove the egg muffins from the pan, I normally use a butter knife around the edges to help remove them from the pan.
